Specialties may include unusual fermentable grains, starches and sugars—such as maple syrup, nuts or honey—in lieu of, or in addition to, malted barley. They may alternatively contain vegetables as flavor adjuncts, or they may be brewed with traditional ingredients associated with multiple different styles, thus defying any single category. Some brewers may classify theirs as an “extreme beer.” No matter, a specialty beer today may be tomorrow’s newly recognized beer style. This is certainly the case, as craft brewers around the world continue to experiment with what beer can be.
