Louis Bouillot
Sparkling wines from Burgundy first appeared in the early 19th century. Jules Lausseure, a merchant based in Nuits-Saint-Georges, pioneered the process as early as 1822. This led to further demand for this premium sparkling wine. The House of Louis Bouillot was founded in 1877 by Jean Bouillot, a wine and spirit merchant who named the label in honor of his father.
Located in Nuits-Saint-Georges in the heart of the famous Côte du Nuits, the House of Louis Bouillot is dedicated solely to creating sparkling wines from Burgundy (Crémant de Bourgogne). Harvesting and sorting is carried out exclusively by hand. Collected in bunches, the grapes are placed in small individual crates to minimize grape damage and ensuring the best fruit concentration through limited juice extraction. Primary fermentation is slow and proceeds at a low temperature, further facilitating maximum extraction of flavors. Louis Bouillot wines are crafted from both Chardonnay and Pinot Noir grapes using the time-honored Méthode Traditionnelle.
