Pisco is most commonly served in cocktails, such as popular recipes like the Pisco Sour. You can also drink pisco straight like Brandy, but most would look for an aged expression usually from Chile in this situation.
What are the different kinds of pisco?
There are three types of pisco: Puro, Acholado and Mosto Verde.
Pisco Puro is categorized by being made from a single, non-aromatic, grape varietal. There are other factors, such as distilling the wine while it is still dry and the yeast has not yet consumed the fermented sugars. However, if it is a single grape varietal, these wines have the best chance to become Puros.
Pisco Acholados are made from wines that contain a blend of at least two grape varietals.
Pisco Mosto Verdes are classified by the way they are made. Pisco Mosto Verdes is produced when the wine is distilled, but the wine fermentation has not finished, leaving the wine still sweet due to the presence of remaining sugars (as opposed to dry wine with Puros Pisco).
