Sauvignon Blanc is a vibrant white wine with crisp acidity mixed with deep notes of green grass, grapefruit, white flowers, and tropical fruits. Sauvignon Blanc lifts the flavors of everything from green vegetables and citrus to seafood and light chicken dishes. Sauvignon Blanc origins

Grape scientists believe that Sauvignon Blanc, which roughly means “wild white” in French, first sprouted in France’s Loire Valley. Or at least that’s the first place wine lovers were enchanted by Sauvignon Blanc wines from places like Sancerre. The region has a relatively cool climate and soil that’s either chalky clay or flint soil called Silex. A good Sancerre is the epitome of a sunny summer day: bright and zesty with tantalizing whiffs of tangerine, grapefruit, citrus blossom, melon, and herbs laced with clean minerality. 

Just across the river, Pouilly-Fumé is also famous for slightly richer Sauv Blancs with notes of lime, Granny Smith apple, and a hint of smokiness. One of the most famous Sauvignon Blancs in the world is Silex, a Pouilly-Fumé created by the late winemaker Didier Dagueneau. 

Sauvignon Blanc thrives around the world in areas with sunshine and well-drained soil. It also needs regular pruning because if it grows unchecked, Sauvignon Blanc fruit develops plant chemicals called pyrazines that make the wine taste like green bell peppers, and not in a good way. 

South African Sauvignon Blanc often flies under the radar, but this old New World region has perfected growing techniques for more than 300 years. A Sauvignon Blanc from the Stellenbosch has a greenish tint and might have flavors of sweet green grass, green apple, and herbs or be more expressive with tropical fruit and citrus. 

California, on the whole, is sunnier than the Loire, so the Sauvignon Blancs made here show more fruit and slightly higher alcohol. You’ll also find a cadre of luxury Napa Valley Sauvignon Blancs, Lail, Melka, and Eisele Vineyard that evoke Sancerre with delicate citrus, floral, herbal, and mineral character, plus tropical notes. 

New Zealand Sauvignon Blancs from Marlborough, Hawkes Bay, Martinborough, and Waipara Valley are beloved for their bold and zesty character. Depending on the winemaking style, they’re brimming with grassy green notes, tart green gooseberry, and a delectable tropical fruit cocktail of mango, passion fruit, and kiwi.

1. Chicken

You’ll love the way Sauvignon Blanc brings out the flavor in chicken dishes, from fried to braised. Sauvignon Blanc can cut through the richness of fried or creamy chicken dishes while bringing out the savoriness in the meat. Pair it with lemony chicken piccata with capers and garlic, roasted chicken stuffed with lemons, chicken cordon bleu, breasts stuffed with ham and Swiss cheese. For a delicious cool-weather dinner, braise chicken thighs in Sauvignon Blanc along with onions, bacon, and potatoes for a delicious coq au vin blanc.

Sauvignon Blanc is ideal with seafood of all kinds, from shellfish to finfish. The wine’s citrusy and fresh flavors are like adding a squeeze of lime or lemon to bring out the sweetness in the fish. Sauvignon Blanc is the right choice whether you choose tangy ceviche, crab cakes, tuna poke, smoked salmon, white fish, sushi, or a platter of oysters.

 

3. Citrus fruits

All Sauvignon Blancs have a cornucopia of citrus notes: grapefruit, lime, mandarin, and lemon. So the wine is natural with any savory citrus dish. Pair it with a blood orange and onion salad, shrimp, avocado, grapefruit salad, lemon risotto, and halibut with hollandaise sauce with fresh lemon.

Bright Sauvignon Blanc is an exciting pairing with fresh herbs, from basil and cilantro to lemongrass and mint. Sauvignon Blanc’s natural acidity and herbal green notes highlight basil’s licorice notes, mint’s coolness, and cilantro’s freshness.
