Mexico - 45.5% - Produced in Santa Maria Ixcatlan, Oaxaca. The cooked agaves are milled by hand with wooden mallets, fermented in open vats made of cowhide and double distilled in small clay pot stills. This is as rustic and traditional as it gets.
