Mexico- Sotol is a distillate made from the head of the Dasylirion plant, of the Asparagaceae family, known as sotol plant, indigenous to Northern Mexico. This sotol is made with Dasylirion Cedrosanum and is fermented in pine wood tanks before being double distilled in copper stills.
