291 Whiskey

United States - 62.5% - “M” starts as 291 Colorado Rye. The whiskey is then transferred to 291 barrels previously used to barrel-age Wisconsin maple syrup by Lincoln County Maple Syrup. The result is a whiskey with notes of toasted oak, toffee, maple syrup, and figs.

Colorado- This uncut version of 291 Colorado Bourbon is a one year, barrel aged whiskey distilled in a copper pot still. Finished with toasted, Colorado aspen staves and bottled at barrel proof, a high proof bourbon whiskey with greater depth and character.

Colorado- This Single Barrel Colorado Bourbon is a one year, barrel aged whiskey distilled in a copper pot still. Finished with charred, Colorado aspen staves. The honeycomb and molasses play their part, as does the rye amid the soft grains.

Colorado- This single barrel rye whiskey is distilled in a copper pot still, aged in American white oak barrels for one year, and finished with aspen staves. Unique, yet traditional, it has a flavor profile of cinnamon, rye bread, oak, and maple.

Colorado- The nose is a mix of earthy aromas and is astringent with hints of citrus. Initially the astringency is overpowering, but as the bite subsides notes of sweet lemon, honey, and orange emerge. Citrus is the overwhelming overtone for this white whiskey.

Colorado- This American Whiskey is a single barrel, pre-prohibition style whiskey distilled in a copper pot still. Short aged in toasted American white oak barrels for 5 months. Short aging brings fruit forward, while the copper still provides a fresh cut leather finish.

Colorado- Caramel, baking spice, and honey on the bouquet with an aggressive attack of citrus and sea salt. Mid palate is soft with a note of vanilla sugar with a very quick finish of malty chocolate. It is very evident that this is a young whiskey.
