Rueda, north of Madrid, is a gravelly plain that endures cold winters and long, dry summers. Yet Verdejo, a white grape native to the region, flourishes here. The dry, well-drained soil forces vines to grow long roots to search for water. Hot days and cool nights mean grapes develop a rich balance of sweetness and acidity. These grapes make aromatic and fresh, yet rich-bodied, wines.
Wines labeled Rueda Superior must be at least 75 percent Verdejo. Basic Rueda need only include 40 percent Verdejo or Sauvignon Blanc in its blend. The remainder is usually Viura or Palomino, two other white grape varieties native to Spain.
